It all started in a small cottage kitchen in 1986; our home kitchen where my mother prepared traditional foods from recipes handed down through the generations.
I recall being young and inspired, sitting on the counter top as she kneaded the dough for the light and airy flour tortillas that accompanied our various meals.
I watched attentive to the mixture of spices and various sauces conjured up in what seemed like a magic kitchen.
In 1988 I visited Mexico for the first time in my life. I was enthralled seeing my aunts running my grandparents’ weekend “cena” or dinner service. Customers lined up to try Don Lupe’s famous birria. Others arrived seeking Don Lupe’s juicy and delicious carnitas. Many flocked to enjoy tacos, flautas, tortas ahogadas and tostadas.
As I grew, I was related with stories of famous restaurants my grandfather worked in. Crafting his skills and recipes over decades ensured only the best meals left his kitchen.
Through the recipes handed down by him a desire was born inside me to master the art of his recipes; Food which our family was famously known for.
This desire is what fuels AGA Catering Services. By offering exquisite meals from our family that are staples in the state of Jalisco, paired with the freshness and quality ingredients of Lane County, I am proud to offer a taste of mexico a little closer to home.
